Optional Seasonings (these can be left out)
1/4 tsp chipotle powder
1/2 tsp minced garlic
1/2 tsp onion powder
1/2 tsp smoked paprika
1/2 tsp mustard powder
2 tsp fresh chopped herbs of your choice (basil, thyme, rosmary, etc.)

1/4 cup whipping cream (35%)
2 tbsp unsalted butter
1/4 cup cream cheese or another neutral cheese like goat's milk cheese
1/2 cup grated cheddar
2 tbsp grated parmesan
pinch of salt
Instructions:
Place cream and butter in small sauce pat, heat up gently
add seasonings
Add cheese
Stir until melted and bring to a simmer.
Once bubbling remove from heat.
Mix until smooth and creamy. If you prefer thicker, cook a little longer. If too thick, thin with a little more cream
It's better to make in small batches, but if you have leftovers, store in the fridge. Reheat slowly. Add small amount of additional cream to thin out the reheated sauce.
